Slicing into an enormous bluefin tuna was an Olympic-style event in Edgewater, N.J. last week. Seeing such a large fish intact, its sleek blue-gray skin and neon-yellow highlights glistening under Mitsuwa’s florescent lights, made it difficult to take that next piece of sushi for granted.
